"De acordo com os estatutos Particulares de 1761, competia a um deputado nomeado pela Junta, com o auxílio de feitores, intendentes e destiladores, verificar se as aguardentes de diferentes qualidades eram produzidas no estrito cumprimento da legislação em vigor. Ao deputado competia também superintender na compra de vinagres e respectiva tanoaria. Devia ainda corresponder-se, de forma regular, com os seus auxiliares, feitores, intendentes e destiladores. A Companhia fiscalizou a produção e venda de aguardentes e vinagres, até 1834. A continuidade de algumas séries documentais após 1834, assim como de serviços internos destinados à sua compra e venda, levou-nos à opção de manter essas séries, assim como outras que foram surgindo, reunidas nesta subsecção."
